Korean Beef Hot Pot (불고기 전골, Bulgogi Jungol)


When its cold outside, the first thing I want to eat is a hot pot of bubbling stew. Korean beef hot pot is a wonderful stew that warms you right up! If you made my Korean BBQ beef (Bulgogi) and have some in the freezer, you are already halfway done with the recipe! Just defrost one of your packs, and you will have a stew ready in no time!

In this recipe I will show you how to make your stew in a ttukbaegi, or a ceramic Korean pot, for an individual serving. If you do not have this, then you can use a normal pot and double the recipe for 2 people. The recipe for the broth is enough for 2 servings.

What you'll need:

1/2 cup of bulgogi (check out the recipe for this here.)

1/2 cup of sweet potato noodles, Dangmyeun, soaked in warm water for 30 minutes

1/4 of a yellow onion, sliced

1 green onion, chopped

1-3 teaspoons of soup soy sauce, depending on your taste

Salt and ground black pepper to taste

Sesame seeds for garnish

For the broth (this will make enough broth for 2 servings):

1 small handful of dried kelp

8 dried anchovies, gutted with heads removed

2 green onion ends

4 garlic cloves

4 cups of water

2 shiitake mushrooms

Instructions:

Prepare the broth:

Bring 4 cups of water to a boil. Add the kelp, dried anchovies, green onion ends, whole garlic cloves, and shitake mushrooms. Reduce the heat, and cover for 10 minutes. When finished, remove the ingredients from the broth, you will be left with about 3 cups of broth. Save the mushrooms for the next part of the recipe.

Prepare the Vegetables:

Slice the onions. Slice the mushrooms that you used for the broth. Chop green onions.

Now the rest:

Heat a ttukbaegi, or small pot, over medium heat. Add the bulgogi and brown for a couple minutes. Add onions, sliced mushrooms, and the soaked sweet potato noodles. Pour the broth into the ttukbaegi, about 1.5 cups. Bring the stew to a boil, then reduce heat to a simmer. Simmer for about 15 minutes. Add 1-3 teaspoons of soup soy sauce, to your taste. Add salt and ground pepper to your taste. Add the chopped green onions and sesame seeds for garnish at the end.
